I have noticed at our local restaurant supply house they have frozen baby backs ... My question is what would be the best way to thaw these before smoking? Normally I would put the frozen food in the fridge for a day to thaw, is this the best way? Thanks for any help anyone can give me.
When catering we have put frozen ribs in tab water temp to thaw 1 hr or 2 .Add a little apple cider vinegar to the water helps with removing the membrane.We used bus trays for this.
