I made a version of Larry Wolfe's Chuck Nachos. I added a little more heat and I call them "Chuck Norris Nachos." Actually was not chuck tonight it was ribeye. And no disrespect to Larry I used D•Dogs Regular rather than WRB.
Put the D•Dogs on the steaks and let them rest in the fridge for a couple hours.

Diced up the steak.
Simmered for a couple hours in diced tomatoes and Rotel. I added some extra jalapenos and banana peppers to give it the real "Chuck Norris" kick.

On the tortilla chips.
Added the cheese and a few extra peppers, some time under the broiler .... And the finished product.
