View Full Version : Spicy Jack Mac & Cheese with Broccoli

Back at Thanksgiving HuckJr. got me thinking about mac and cheese and while making pumpkin pies I noticed this recipe on the evaporated milk can. So now for 10 days I've been craving mac and cheese ... tonight was the night. Not real exciting, but very good.

Ingredients
2 cup Elbow Macaroni, Dry -- (8 oz.)
2 cups Broccoli, Fresh or Frozen
2 cups Cheddar Cheese, Sharp -- Shredded
2 cup Pepper Jack Cheese -- Shredded
1 can NESTLÉ® CARNATION® Evaporated Milk -- (12 oz.)
1/2 cup BUITONI Refrigerated Freshly Shredded Parmesan Cheese -- Divided
1/2 tsp Black Pepper, Ground
2 tbsp Bread Crumbs, Dry

Instructions

PREHEAT oven to 350° F. Lightly grease 2 1/2-quart casserole dish.

COOK macaroni in large saucepan according to package directions, adding broccoli to boiling pasta water for last 3 minutes of cooking time; drain.

COMBINE cooked pasta, broccoli, cheddar cheese, Pepper Jack cheese, evaporated milk, 1/4 cup Parmesan cheese and black pepper in large bowl. Pour into prepared casserole dish. Combine remaining 1/4 cup Parmesan cheese and bread crumbs; sprinkle over macaroni mixture. Cover tightly with foil.

BAKE for 20 minutes. Uncover; bake for an additional 10 minutes until lightly browned.

Jr got his his mac & cheese. We use my brother's recipe I'll have him post it soon. Two things about your recipe that makes me think your are going the right way. Evaporate milk richness and broccoli which I love. I checked with Paula and she says where is the butter? Looks real good BBquzz thanks for the pics.
