What is the difference between "Saucing" and "Glazing" a rack of ribs or meat in general? Seems like in the videos they are saucing throughout or at the end of the cook, but glaze just before turn-in.

When saucing thur out the cook a thin liquid is used. A combo of apple juice and oil or butter or vinegar.Glaze is thicker bbq sauce added sugar, honey and or jam or perserves.

Do you put the glaze on more for appearance or taste? Seems like some of the food pictures I see the ribs look like they were sprayed with glossy paint.
