View Full Version : Pork Chops with Apple Reduction Glaze

I know this isn't technically "BBQ" but it's got a great taste and the same results could be achieved if you spoked the chops. I don't have a smoker, and probably won't get one till next spring, but for now, this is how we do em...

Here's what you need:

Boneless Center Cut Pork Chops
Your favorite Rub (we make our own with Bread Crumbs, Rosemary, Cumin, Coffee Grounds, Garlic Powder, Chili Powder and a few other secret spices)
4 Apples (peeled & sliced 1/4" thick)
1 1/2 - 2 cups Apple Cider (save 1/4 reserve)
1/4 cup packed brown sugar
Splash of Maple Syrup
Drizzle of Honey
Cornstarch
EVOO (Extra Virgin Olive Oil - We're Rachael Ray Nuts)


Step 1 - Coat chops in EVOO and rub to your liking and let stand for 20 min to marry the flavors together (beer time)
Step 2 - Cook using a little VERY HOT(not smoking) EVOO for 3 min on each side ((depending on thickess you may need to increase/decrease time))
Step 3. Remove chops and put in baking dish and let them rest (they're gonna get a work out again, don't worry)
Step 4. Deglaze your pan using the Apple Cider and toss in your apples, brown sugar, syrup and honey and let it reduce down stiring constantly...
Step 5. Once apples are very tender, take your 1/4 reserved Apple Cider and wisk in about 1/4 - 1/2 Teaspoon of Corn Starch.
Step 6. Pour this mixture into your Glaze slowly, a little at a time until your glaze gets to its desired thickness.
Step 7. Pour over well rested chops and wake em up again!!
Step 8. Drop in oven (uh yah, I mean smoker) on 350° for about 20 min or so

Your tounge will be slapping your brain

((DISCLAIMER - I kinda made up the amounts while typing this. I haven't seen a measuring spoon or measuring cup in my house since 1993 although my wife swears she saw one about 2 years ago...I personally think she's lying. :rolleyes: So taste your goods as you're going along))

Sounds pretty good any thing cooked over a fire taste better . I have my own sense of measurement also.
