		<description>Do you trim any fat? What kind of wood are you smoking with? How many hours per pound? What temp are you smoking it at? Why fat down and not up? Did you mop it?

I&#039;ll give it a try: Rub on mustard, rub on spices, rest 4 hours then smoke until 200f. I hope I don&#039;t end up with a peice of leather! Wish me luck! I post back on my results.</description>
